Can I set my own anchor labels?
No. Every Likert question uses the same five labels, from strongly agree to strongly disagree. If your instrument uses other labels or seven points, ask it as a multiple choice question with your own options.
Are responses anonymous?
That is your choice. Identity is only captured where you place an interaction that asks for it.
